Walk down most supermarket aisles and "vegetable snack for kids" usually means a puff, a straw, or a crisp built from corn starch or rice flour, coloured green, and sweetened just enough that a toddler will actually eat it. The vegetable is often an afterthought — a dusting, not an ingredient.
Our Broccoli & Cheddar Cheese Bites work the opposite way round. There's no starch base to bulk them out and nothing added to make them palatable, because there's nothing to disguise. The ingredient list is short enough to read in one breath: broccoli, cheddar cheese, cottage cheese. That's it.

What's actually in the bag
Every batch is built from three ingredients, in fixed proportions we don't cut corners on:

A small amount of milk is used during preparation to help bind the mixture before freezing — but it doesn't survive the process. Like every drop of water in the bite, it's removed entirely during freeze-drying, so it plays no role in the finished snack beyond helping everything come together at the mixing stage.
What you won't find: added sugar, preservatives, or the corn starch, rice flour, or wheat fillers that make up the bulk of most shop-bought vegetable snacks. Those fillers exist because extruded or baked puffs need something to hold their shape and carry flavour. Freeze-drying doesn't need a filler to do that job — the broccoli and cheese hold their own structure.

That's what leaves the broccoli's and cheese's structure intact rather than collapsed or baked solid. The result is a bite that starts crisp and then dissolves almost immediately in the mouth, rather than requiring the sustained chewing a baked or extruded puff needs. It's a texture that comes directly from how the snack is made, not from an added ingredient designed to soften it.
What each ingredient actually contributes
None of the three ingredients are in the bag for padding. Each one is doing a specific nutritional job:
Broccoli
A source of vitamin C and vitamin K, along with dietary fibre. Broccoli also contains glucosinolates, the compounds responsible for sulforaphane — the subject of a lot of the vegetable's reputation — which form when the plant's cells are broken down, whether by chopping, chewing, or processing.
Cheddar cheese
A source of calcium and protein, and one of the more concentrated everyday dietary sources of vitamin B12. It's also what gives the bite its savoury depth, so no flavour additives are needed to make a vegetable snack that a toddler will actually want to eat.
Cottage cheese
Higher in protein relative to its fat content than most cheeses, and rich in casein — a slow-digesting protein. It adds body and creaminess to the mixture without needing cream, butter, or added fat to do it.

Blanched, not cooked
Before the broccoli goes into the mix, it's blanched — plunged into boiling water for around two minutes, then moved straight into an ice bath. That short, sharp shock isn't cooking in the sense of softening the vegetable through; it's just long enough to deactivate the enzymes that would otherwise cause the broccoli to lose colour and break down nutritionally while it waits to be processed. The ice bath stops the heat dead the moment its job is done.
From there, it's the freeze-drying cycle — not the blanch — doing the real preservation work: no sustained heat, no liquid water stage, just sublimation drawing the moisture out directly. The result is a broccoli piece that's been briefly stabilised, not cooked down.
